Cheese Pastries with Bacon and Scallion

1 1/2 sticks of butter, cut into quarter-inch pieces

12 oz water

salt

12 oz flour

6 eggs

3 oz scallion, minced

8 slices of bacon, cooked quite crisp and crumbled finely

12 oz crumbled Stilton cheese

Melt butter on a medium heat with water and pinch of salt. Add flour and stir until mix becomes a ball. Take off heat and slowly stir in eggs, being sure they don't cook separate from the mix. Add the scallion, followed by the bacon and the Stilton. Make inch-thick balls of dough and place them on a buttered cooking sheet. Bake at 350 degrees for about 20 minutes or until they brown.

Makes about 70 pieces.
