5 minced garlic cloves
3 chopped onion
1 cup scallion, chopped
1 oz thyme
2 teaspoons salt
1 tablespoon ground allspice
2 teaspoon grated nutmeg
2 teaspoons cinnamon
1/2 cup jalapeno peppers, minced
1 tablespoon black pepper
20 drops of Tabasco
2 oz soy sauce
1/2 cup vegetable oil
6 lb boneless chicken breasts
Mix garlic, onion, scallion as well as the thyme. Add salt, allspice and nutmeg. Follow this with the cinnamon, Tabasco, pepper, jalapeno, oil and finally the soy sauce.
Cut the chicken breasts into three-quarter inch cubes and marinate in the above mixture, covered and refrigerated, stirred occasionally, for at least a couple hours.
Bake at 350 degreees for 30 minutes.
Serves 12 as an entree or can provide 60 bite-size pieces as an hors d’oeuvres.
