marinade:
2 oz lemon juice
2 oz lime juice
3 oz soy sauce
2 oz chopped cilantro
2 oz chopped peeled ginger (don’t use too much)
2 oz minced white onion
2 oz butter
salt and pepper to taste
6 mahi mahi steaks
Mix marinade ingredients together, and marinade fish for four hours. Broil fish to sear, or alternatively saute in marinade. Remove fish from heat before it’s done, as it will continue cooking. Spoon marinade on top after plating fish.
Makes 6 entrees.
