juice of 10 limes
6 oz orange marmalade
9 minced garlic cloves
12 oz fresh coriander, chopped
4 oz olive oil
3 tablespoons soy sauce
1 teaspoon red pepper flakes
2 lb. shrimp, uncooked, tails removed
Mix marmalade, oil, garlic, coriander, soy sauce, lime juice and pepper flakes. Add shrimp and marinate, chilled, for two hours or more.
Saute shrimp in marinade. Shrimp cook quickly. Serve as hors d’oeuvres or plated starter.
